How to measure it
Honey is the heaviest ingredient on this site at 340 g a cup, nearly three times the weight of the same cup of flour. It is a dense supersaturated syrup, and maple syrup and golden syrup sit in the same neighbourhood at around 320 to 340 g.
Honey also clings to everything it touches, so a measured cup rarely all makes it into the bowl. Lightly oil the measuring cup first, or better, put the mixing bowl on a scale and pour honey straight in to the target weight.
Because honey is about 17 percent water, swapping it for granulated sugar changes both sweetness and moisture. Conversion charts move weight, not recipe chemistry.
