How to measure it
Powdered sugar, also sold as confectioners or icing sugar, is ground so fine that it aerates like flour. An unsifted spooned cup weighs about 120 g, while a sifted cup drops to roughly 100 g. That is a 17 percent difference from one word in the recipe.
Read the recipe's word order carefully. One cup powdered sugar, sifted means measure first then sift. One cup sifted powdered sugar means sift first then measure, and that cup is lighter.
For frostings and glazes the exact amount is forgiving. For macarons and meringue work, weigh it.
Density source: Published baking company ingredient charts (unsifted). Method assumed: Unsifted. Sifted powdered sugar falls to roughly 100 g a cup.
